New player...demo question

Hey guys, im trying out the demo and it seems pretty fun so far but theres two things im wondering about.

1) how do you have the buildings not autoplaced?

2) what is diffrent from the other races?

1) toggle button, marked with infinity symbol. bottom of screen, right of center.

2) in other races there are sometimes horses (esp. in horse races), whilst in sins there are rarely even ponies.
