probably the easiest way to learn how to edit the text files are to read the documentation on sins modset. it gives you the basic in how to change the entity files. for mor eadvanced you usualy have to learn on your own it would take alot of explaing for every single detail. the easiest way to create new text files is to find one thats similar and copy it and just change what you want to 

I can't even figure out how to open them. I know the convert tool exists, but can't igure out how to use it. I also couldn't find a complete guide to use it. am I supposed to run it rom the cmd prompt?

did you get the sins mod package from the download section here at sins? if you didn't download it and there is a folder called refernce data. those are all the same as the 1.05 gameinfo. and you can open those in notepad then play around with them however you want.

if you have 1.09 your mod will not work because the 1.09 reference data hasn't been realeased yet.
