Are there any particular user made maps that are played online often?
How about user made maps that you think are outstanding?
And which maps that shipped with the game do you enjoy the most?

Sadly, because the game does not have auto-download for custom maps (Galaxy Forge-made maps and not "Map Designer maps), customs are almost never played online. Most games are played on the random maps and occassionally on a non-random standard map (ie, Razor's Edge, Maelstrom).
Just a question has anyone made our own solar system map?
I have created my own star maps.
However on one of them you have to get to opersite system by wormhole only and its a 3v3 map. (Which means if you all decide to inflight eachother in your system the others in the next system may be allied and attack you (recruit people in your system if they've been hammered to provide protection and get a foot hold) - plus you have your own system within a system so to speak, with chokepoints so you can hold your own if need be).
You can't use the star, so any attack that appears makes you unaware if your not got a scout in their system.
Made it with 3v3 random and 3v3 (where first 3 people start on one side and other 3 start on other)
Got the Idea from Star Trek: Deepspace 9. (With Domminion war).

not auto ... but pretty close. .galaxy files go in your galaxy folder. .tga files go in your textures folder. Pretty simple.
I got the link from the Sins website ...
and yes there are several "Sol" maps in the 19 pages of maps listed there.
What I meant by "lack of auto-download" is that in Sins online multiplayer when someone joins a game that's hosting a custom map, if someone doesn't have the map file it won't automatically downloads for them (from the host). This makes it very difficult to play custom maps online since few multiplayer people (just about all of whom only play multiplayer and never single player) have no idea how easy it is to add custom maps. Since the map files are tiny little text files, they would download very quickly (2 seconds) if the game allowed for custom map auto-download.
I've released a couple Galaxy Forge-made Sins maps myself so I know all about how easy it is to add them in. I have had some success in the past with getting people to play my maps, but I've mostly had to e-mail them out to people.
