The most obvious reason for developers to use 3 races is that beyond that you will end up repeating the same stuff. If you want really GOOD races, go for a few ones and make their differences really strong. If you go for several races, you will always end up matching part of one to another side. Sure you can have many, many, artistic styles. But how many times can you reinvent a Battleship? A tank? A basic fighter / infantry unit? You'll be suprised how easy it is to make units
