Did you notice if you had a home planet assigned? I have encountered a bug where the first planet you start on isn't your home by default, and you lose lots of tax and resources, this could explain how the AI could out-produce you so quickly.

I just started a new map to test, and discovered my first planet had an alligiance of 25% and mousing over the planet allegiance tab to the bottom left of the screen showed the tax income was -75% and aseroid extraction was -75%. I shall try to duplicate.
